03AGING FOR 35 DAYS

Rib roast—the finest cut—
aged for up to 35 days

We store 50 rib roast cuts at all times, aging them for up to 35 days. Enzymes process the proteins into amino acids, softening the fibers and improving the meat's texture and taste. Then, we carefully select and serve only the best of these 50 cuts.

042 HOUR RULE

Follow the two-hour rule
for meat at the peak of flavor

We age our meat without exposing it to the air, opening only the portion that is to be served that day. Meat reaches its peak flavor two hours after being cut, so we always cut it just before serving.
